Beer Barrel Release Notes

We work closely with local craft breweries trading barrels back and forth.

We use barrels that previously aged craft beers to then age our Spiced Rum.

Batch #1

These barrels are well-traveled. They started out holding Jack Daniel's before being sold to Appleton. After that they passed into the hands of Cigar City Brewing who aged a Belgian Quad in them called Forgotten Island. Then we got our hands on them. We filled them with Siesta Key Spiced Rum. It has been aging and soaking up the flavors from all of the prior uses of these barrels. It is delicious!

Batch #2

These barrels previously held our Distiller's Reserve Spiced Rum and Esperanza from JDub's Brewing Company & Tap Room.

 

Batch #3

This batch came out of barrels that held a cherry stout from JDub's Brewing Company & Tap Room. It was an award winning beer that provided an amazing set of flavors in the barrels. The cherry notes underlying the spiced rum along with the barrel influence has produced an unusual depth of flavors. This is our favorite beer barrel batch yet! 

 

Batch #4

The barrel that this batch came out of was used previously by Big Top Brewing Company to age a Bananas Foster beer. The flavors left in the barrel have melded with the spiced rum to create an amazingly delicious batch of SK Beer Barrel Spiced Rum.

 

Batch #5

This batch spent time in 53 gallon barrels that previously held Ayawasca (a Belgian Dubbel) from Darwin Brewing Company Fantastic chocolate notes come through.

 

Batch #6

This beer barrel aged spiced rum has delicious chocolatey notes from the JDub's Brewing Company & Tap Room ‘Miguel’ beer previously stored in the barrels.

 

Batch #7

This is from a single 30 gallon barrel that held Marron, an American Brown Ale from Darwin Brewing Company.

 

Batch #8

This is from a single 30 gallon barrel that held Charapa, a spiced Porter from Darwin Brewing Company.

 

Batch #9

The barrels were used by JDub's Brewing Company & Tap Room to age an unnamed Imperial Stout that was released at the end of 2016. We refilled the barrels with our spiced rum and let it sit until last week. The air was filled with mouth watering notes of espresso and dark chocolate when we emptied the barrels! Yum!

 

Batch #10

This batch of rum was aged in barrels that held a Tropical Pale Ale called ‘I am Ocean’ from Barley Mow Brewing Company in Largo, Fl. This was our first time experimenting with beer that had these kinds of fruit flavors. It was a big success, this is a good one folks! 

 

Batch #11

This batch of spiced rum was aged in a barrel that previously held an Imperial Stout from JDub's Brewing Company & Tap Room. The beer was jet black in color with a bold, roasty, and slightly sweet malt foundation. 

 

Batch #12

This batch of spiced rum was aged in a barrel that held a Wee Heavy beer from JDub's Brewing Company & Tap Room. The beer was a deep ruby colored ale with caramel and malty notes. This batch we left unfiltered, it is hazy and full of big flavor. Shake and enjoy!

Batch #13

This batch of rum was aged in blood orange imperial stout barrels from Motorworks Brewing. The craft beer lovers will really like this batch. There are hoppy notes that lead into a smooth orange finish.

 

Batch #14

This batch of spiced rum was aged in barrels that previously held beer from Darwin Brewing Company. The beer was called Charapa, a porter with subtle spice, cacao and honey.

 

Batch #15

Batch of spiced rum that was aged in barrels that previously held beer from JDub's Brewing Company & Tap Room. The beer was an Imperial Stout with roasty chocolate flavors. 

 

Batch #16

Aged in a barrel that held a coconut Porter from 3 Keys Brewing. This batch turned out stunningly dark with a smooth spiced flavor. We left this batch unfiltered to maximize flavor.

 

Batch #17

Aged in a barrel that held an Imperial Stout from 3 Keys Brewing. This batch is bright amber in color and has a crisp clean taste. We left this batch unfiltered to maximize flavor.

 

Batch #18

This batch was aged in a barrel that held an Imperial Stout from JDub's Brewing Company & Tap Room. The beer was jet black in color with a bold, roasty and slightly sweet malt foundation.

 

Batch #19

This batch aged in a barrel that previously held a Datil pepper and chocolate Imperial Porter from Motorworks Brewing (Silver Medalist at the 2018 World Beer Cup®). Motorworks describes this beer as a dark and dastardly brew that was inspired by the chocolatiers of St. Augustine, melding the hefty, habanero-like heat of Datil chili peppers, grown commercially in the city for a century, with rich cacao. The Ancient City is the chief cultivator of Datil peppers in the world, and this Porter boasts roughly a pound of the fiery local delicacy per barrel. Bittersweet dark chocolate flavors courtesy of cacao complement the chili’s natural fruity character in a uniquely Floridian blend of sweet-heat.

 

Batch #20

This batch of spiced rum was aged in a barrel that previously held a Scotch Ale called ‘Wee Heavy’ from JDub's Brewing Company & Tap Room. The beer was a deep ruby colored ale with caramel and malty notes. This batch we left unfiltered, it is hazy in color and full of big flavor. Shake and enjoy!

 

Batch #21

This spiced rum was aged in a barrel that once held beer from Motorworks Brewing. The beer was an Imperial Brown Ale called ‘Heavy is the Head’, a medium-bodied beer with a bouquet of cinnamon, oak, and subtle hints of tropical fruit with cinnamon, rich chocolate and honey flavors followed by pleasant spiced rum warmth and dry, cacao finish.

 

Batch #22

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that previously held a Milk Stout called Naughty Night Out. We must admit that this barrel almost got forgotten about in our warehouse and has been aging for longer than 2 years! The rum turned out incredibly smooth sipping and smells like delightful chocolate milk!

 

Batch #23

This batch was aged in a barrel that had previously held a Barleywine from Calusa Brewing called Ignorant Clod, a full-bodied English-style Barleywine filled with malty richness and power.

 

Batch #24

This batch is our spiced rum that aged in a barrel that previously held a Breakfast Stout from 3 Keys Brewing. This stout is brewed with toasted oats, cinnamon, chocolate and Ethiopian cold brewed coffee. 

 

Batch #25

This batch of spiced rum was aged in a barrel that previously held an Imperial Stout from JDub's Brewing Company & Tap Room. The beer was jet black in color with a bold, roasty and slightly sweet malt foundation. 

 

Batch #26

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that had previously held Mad Willie XXX Belgian Tripel - A dark golden color with a mild peppery/spice aroma. Has a warming alcohol effect with the taste of dried dates.

 

Batch #27

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that previously held a Milk Stout called Naughty Night Out - Coffee and dark chocolate aroma. Sweet milky malt sweetness with a subtle bitter finish.

 

Batch #28

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that previously held Four Play Belgian Quad - A Belgian style Quad with aroma of raisin and figs. Sweet malty biscuit like flavor with a warming finish.

 

Batch #29

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that previously held Barleywine - A strong Ale with a candy sweetness from the large grain bill with just enough hop bitterness to compliment. Watch out or this one will sneak up on you!

 

Batch #30

This batch of spiced rum was aged in a barrel from Naughty Monk Brewery that previously held a Belgian Strong Golden Ale called Trap Door - A Belgian Trappist Ale light brown in color with warming alcohol notes. Medium bodied with a malt finish.

 

Batch #31

This batch of spiced rum was aged in a barrel that had previously held an English Brown Ale from JDub's Brewing Company & Tap Room. We were surprised about the rich and bright flavor of this batch of rum. These particular barrels that aged the beer and then the rum started out as ruby port wine barrels. You can actually taste a slight sweet and fruity flavor that comes from being aged in the port wine barrels. 

 

Batch #32

This batch of spiced rum was aged in barrels that previously held a Belgian Quad style beer from Motorworks Brewing. This baby is SMOOTH! One of our favorite beer barrel batches in a while! Perfectly sippable.

 

Batch #33

This batch was aged in small barrels that previously aged a Milk Stout from Darwin Brewing Company. Fall spice is perfectly complimented by a dark, robust chocolate finish. Smooth, sippable, DELICIOUS!

 

Batch #34

This batch was aged in small barrels that previously aged a beer from Arkane Aleworks called Dessert Eagle, a 12% abv Imperial Sweet Stout finished with graham crackers, local cocoa nibs and marshmallow.  A S'mores beer! This rum aged for over 2 years, the longest we have ever aged a beer barrel and it shows in the flavor. This batch is a good one, folks! Smooth and just the right amount of sweetness and chocolatey flavor.

 

Batch #35

This batch is from small barrels that held an Imperial Stout from Darwin Brewing Company called Apparent Motion Stout. The beer previously in the barrels was described as saturated with chocolate and roasted barley flavors along with the addition of cold brewed coffee.

 

Batch #36

This batch is from small barrels that held a Belgian Quad from Darwin Brewing Company. The beer previously in the barrels was described as a dark amber brew with a fig and toasty aroma. Smooth with a malty sweetness.

Batch #37

This batch was aged in a barrel that previously held an Imperial Brown Ale beer from Motorworks Brewing. This Ale features a big, chocolatey-caramel nose and sweet caramel flavors balanced by a slight herbal bitterness courtesy of Yerba Mate, plus a bit of toasted malt character.

Batch #38

This batch was aged in a barrel that previously held a Wee Heavy style of beer from Motorworks Brewing. This Wee Heavy was dark brown with copper highlights and sweet, malt-forward caramel aromas and flavors.

Batch #39

This batch was aged in a barrel that previously held a 10.45% abv Belgian Quad for 12 months at Motorworks Brewing. The smell that filled the distillery when we emptied these barrels was incredible! This batch is perfectly light with a slight caramel taste and a malt finish. Very smooth, very sippable. 

Batch #40

This batch was aged in small barrels previously used to age a Bananas Foster Smoothie Ale by Arkane Aleworks. Aged in the very same barrels that previously housed our wildly popular S'mores Beer Barrel Batch #34, it was then used to age an Ale treated with flambéed bananas caramel and vanilla before housing our spiced rum for 6 months. All of these flavors are deeply present in aroma and flavor.  Bottled unfiltered to keep every precious drop, this batch may appear hazy with small amounts of spice sediment present.

Batch #41

The barrel began its life as a Templeton Rye whiskey barrel. Then, it was used to age two different Russian Imperial Stout beers at Arkane Aleworks, a Largo, Fl brewery. The first Stout was a robust traditional Imperial Stout, aged for 24 months. Next, a cinnamon whiskey barrel aged Stout aged in the barrel for a year. Finally, the barrel made its way to Siesta Key Rum. We filled this well traveled barrel with our Siesta Key Spiced Rum. As the rum aged, it took on the chocolate, cinnamon and coffee flavors that make Imperial Stouts so enticing.

Batch #42

Mystery Barrel! Batch 42 was a bit of a mystery! All the proper records of the barrel had been kept - except for one important detail - where did it come from?! What we do know: The barrel began as a 53 gallon bourbon barrel. Next it was used in our beer barrel aging program and turned out some great batches! The barrel’s most recent adventure is where the mystery began. After a thorough investigation we could not trace what beer was aged in the barrel. After being filled back up with our spiced rum the barrel sat for over 4 years! This batch of beer barrel aged spiced rum is smooth and has subtle notes of spice, chocolate, and coffee sure to mystify your taste buds.

Batch #43

This barrel comes to us as another part of the "Dessert Eagle" series from Arkane Aleworks in Largo, Florida. It was used to age a dark, decadent, delicious Rocky Road stout that has imparted a very light malty, chocolatey finish that pairs remarkably well with the spices we've already infused into our rum. After aging for 12 months, our Spiced rum has taken on a smooth buttery finish with lots of delicious oaky flavor from the wood of the ex-Bourbon barrel.
